Cioppino This stew was created by fishermen in San Francisco, who threw whatever they had caught into a pot, added some seasoning, and called it dinner. Enjoy experimenting with the recipe. Ingredients 2 tbsp virgin olive oil 1/2 cup chopped onion 1 1/2 tsp minced garlic 1/4 tsp red pepper flakes 1 lbs cleaned mussels 8 oz. large scallops 8 oz. peeled and deveined shrimp 1/2 cup clam juice 1/4 cup diced parsley 1 large can stewed tomatoes, with juices. Directions: Saute the onion, garlic and pepper flakes in the hot oil.

Simmer for 30 minutes. Add the potatoes and simmer for about an hour. Ten to 15 minute before potatoes are done, pour in the cream. Stir to blend well and toss cinnamon sticks. Vegetarian Chili Make this chili as hot or mild as you want. It tastes even better the second or third day. This recipe makes 8 to 10 servings. Ingredients: 2 tbsp virgin olive oil 1 large chopped onion 2 minced garlic cloves 2 chopped green peppers 1 pkg chili seasoning 1 large can stewed tomatoes with juices 2 cans chili beans 1 can kidney beans Toppings: sour cream, chopped onions, shredded cheddar Directions: Heat the oil in a large pot.

Thawed frozen corn 2 cups whole or reduced fat milk Salt and pepper to taste 3/4 cup shredded cheddar cheese. Directions: Saute the onions, celery and 16 oz. of corn in a skillet until softened. In a blender, mix the remaining corn with a cup milk. Add mixture to the skillet and mix in the remaining milk, the cheese and seasoning. Simmer and stir for 10 minutes. Divide soup into bowls and top with crumbled bacon. Shrimp Soup This elegant soup is wonderful for company. This recipe makes 6 servings.
